Advanced HACCP Workshops

These workshops cover reassessment of E. coli 0157:H7 in beef establishments and intervention strategies to control the pathogen.

This annual course is designed to assist companies in complying with USDA E. coli Reassessment regulation 65-07 (10/07): Notice of Reassessment for Escherichia coli 0157:H7 Control and Completion of a Checklist for all Beef Operations.

  • line supervisors employed by beef slaughter, fabrication, and grinding establishments

Curriculum

  • reassessment of E. coli 0157:H7 in beef establishments and intervention strategies to control the pathogen.
  • assist companies in complying with USDA E. coli Reassessment regulation 65-07 (10/07): Notice of Reassessment for Escherichia coli 0157:H7 Control and Completion of a Checklist for all Beef Operations.
  • fundamentals of Listeria control and prevention in ready-to-eat meat and poultry establishments and evaluates the application of these principles to meet USDA regulatory requirements.
