This one-day workshop provides resources and hands-on experience in preparing documents for a food safety plan. This course is intended for small-scale dairy food processors that are exempt from having a full food safety plan prepared by a Preventive Controls Qualified Individual (PCQI) as required by the Food Safety Modernization Act (FSMA). This is not a PCQI certification course.

Who Should Attend

  • Small-scale, farmstead and artisan dairy food processors
  • Individuals in the dairy industry who need basic training in conducting a hazard analysis and determining preventive controls, who do not need PCQI certification

Curriculum

  • Review the Food Safety Modernization Act (FMSA) requirements for Food Safety Plans from the perspective of small-scale dairy foods processors.
  • Learn how to identify biological, chemical and physical hazards encountered in the manufacture of dairy products.
  • Learn how to conduct a hazard analysis and determine appropriate methods for controlling hazards
  • Write process, allergen, sanitation, and supply-chain controls.
  • Write a recall plan.
  • A practical session provides an opportunity for participants to work on elements of their own food safety plans, or example plans provided in class, and get feedback from the instructor.
