The objectives of this Center are as follows

Strengthen the educational and research capacity in plant and mushroom foods in Food Science.

Provide intellectual leadership to the University in this area.

Foster collaboration within and between the Department of Food Science, the College of Agricultural Sciences and the University including the College of Medicine.

Stimulate discovery through basic and applied research.

Raise funding to support research through government, industry, philanthropic and foundation sources.
