A food system is sustainable when it ensures food security, prioritizes the delivery of healthy, high-quality food, and creates sustainable environmental and economic systems. In this context, the three key components of a sustainable food system - also representing the primary directions in my research- are 1) promoting environmental protection through circular economy initiatives; 2) enhancing food quality while establishing transparency and fair market practices; and 3) promote health and well-being. In this seminar, I will present highlights from my research efforts in these three areas, focusing on recent and ongoing projects. The main tool we use is nuclear magnetic resonance (NMR) often combined with other analytical methods, chemometrics and bacterial analysis. Specific examples of project highlights include methods for food analysis and quality control, the valorization of coffee waste and the interactions between carbohydrates and bacteria.
